 Ham Loaf with Marmalade - Mustard Glaze

 February is short month but a key to turning the corner from a long hard winter. It is also the month that hosts Valentine's Day (the14th), which Ukraine has whole heartily adopted. Men, young and old, scrambling for chocolates and flowers to present to their love interests. I have won hearts through my cooking and this Ham loaf recipe is one of my favorites. It is a simple dish served with mashed potatoes and green beans. Ham loaf is more high-spirited than old fashioned meat loaf.
HAM LOAF 1/3 cup butter 1 medium onion fine chopped 1/2 cup red sweet pepper 1/2 cup yellow sweet pepper 1 pound ground lean pork 1 pound ground smoked ham 1pound ground smoked pork chop 1 cup bread crumbs 1 cup milk 3 eggs, beaten to blend 1 teaspoon pepper
GLAZE 1/2 cup orange marmalade 1/2 cup mustard 1/4 cup honey
Melt butter in a heavy skillet over low heat. Add peppers and onions and cook until tender. Approximately 15 minutes, then let cool.
Mix ground meat, bread crumbs, milk, eggs, pepper and cooled vegetable mixture in a large bowl. Transfer to baking dish and shape into a loaf. Using a sharp knife cut shallow "X's" across the top surface of the loaf.
Blend marmalade, Mustard, and honey in small bowl. Drizzle about 1/3 of the glaze over the ham loaf; place in pre-heated oven at 350 degrees Fahrenheit. After 15 minutes of baking, drizzle more of the glaze over loaf then bake another 15 minutes. Then pour over the remainder of the glaze and bake for 25 minutes. Transfer loaf to a platter and let stand 10 to 15 minutes. The pan juices can be made into gravy by adding flour or just whisk the juices and pour over the servings of sliced ham loaf and mashed potatoes.
